This is as colorful as it is tasty. Hot as you want depending on how much and what type of chili you add. When I made it I used nearly 1/4 cup of chili in adobo sauce, and a tablespoon of ancho powder (a fairly mild chili), almost as much cumin, and pecan smoked jalapeno sausage. You might not like all that heat, so I scaled it back. Ramp it up as you like from here. Serve over brown rice.

Recipe Ingredients for Jannid's Black Bean and Sausage

1 c onions, chopped
1 c carrots, chopped
1 c celery, chopped
2 T olive oil
2 T chili, in adobo sauce, chopped
2 t chili powder, ancho
2 t cumin
32 oz tomatoes, chopped
32 oz canned black beans, drained and rinsed
1/4 c parsley, chopped
1 c chicken stock, low salt
12 oz smoked sausage

Recipe Directions for Jannid's Black Bean and Sausage

  1. chop the veges and saute a few minutes with olive oil in a large pot, when the veges soften add the chopped chili in adobo sauce, ancho chili powder, and cumin, stir and saute for a minute or two.

  2. Add the canned diced tomatoes, black beans, and parsley - stir to mix. Add the sliced smoked sausage and enough chicken stock to get a consistency you want - 1 cup or so if you want to serve it over rice, 4 cups or so if you want to serve it as as soup. You can always add more stock, so add as it cooks til it is just right.

  3. Simmer to let the flavors combine, taste and adjust seasonings. This can cook a short time like 15-20 minutes or a longer time like an hour or so. Whatever is best with your schedule.

  4. I suggest that most of you use less of the chili in adobo sauce unless you like very spicy things.
