Recipe Ingredients for Jannid and Julia's Potage Parmentier

5 c potatoes, peel and chopped
3 c leeks, slice thinly
8 c water
1 T salt
1/2 c cream
4 T creme fraiche
4 T chives, snipped

Recipe Directions for Jannid and Julia's Potage Parmentier

  1. Peel, rinse and dice the potatoes.

  2. Thinly slice the white and very light green part of the leeks. Soak in water, refreshing the water a few times to remove grit.

  3. Simmer veges with water and salt for about an hour or til veges are very tender.

  4. Use a blender stick to puree - Julia does not approve of food processors, but a blender stick works very well. Taste and add more salt if necessary.

  5. Can be refrigerated here as the soup is good hot or cold. If it is to be served right away, once pureed stir in either the cream or butter (creamy soup or buttery) and serve w/a dollop of creme fraiche and an artistic sprinkle of chives.
