Recipe Ingredients for Janice's Vegetarian Beans and Rice

10 oz Beans Pinto
16 oz Beans Black
1 cup, diced Celery
3.5 cup, sliced Onions
3.5 cup, chopped Peppers, Sweet, Red
1.75 cup Corn, Sweet, Yellow
2 cup Sauce, Ready-to-serve, Salsa
2 tbsp Chilpotle Peppers
4 clove Garlic
2 tbsp Extra Virgin Olive Oil
2 cup Rice, Brown, Medium-grain
2 tsp Vegetable Broth
1 tsp, ground Basil, Dried
2 tsp Cumin Seed
0.25 tsp Pepper, Black

Recipe Directions for Janice's Vegetarian Beans and Rice

  1. sort, rinse & soak beans overnight

  2. Cook the rice per package directions but use veggie stock instead of water.

  3. place a large non-stick skillet over medium heat and saute the onion, celery, and red pepper in the olive oil until softened.

  4. Add garlic and saute two minutes. Add the corn, jalapeno, and other seasonings and simmer five minutes.

  5. slow cook 8 hours on low

  6. stir in rice & serve
