Recipe Ingredients for Jane Brody's Pumpkin Bread

1/2 cup sugar
1/2 cup vegetable oil
3/4 cup pumpkin puree
2 eggs
1 1/2 cup whole wheat pastry flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raisins

Recipe Directions for Jane Brody's Pumpkin Bread

  1. Place all ingredients in your kitchenaid mixer. Mix on low speed for 3 minutes until well blended. Do not overmix.

  2. Place in one loaf pan. Bake for 45 to 60 minutes in 350 degree oven.

  3. slice into 8 slices
