Delicious lentil soup from Jane Brody's Good Food Book

Recipe Ingredients for Jane Brody Lentil Soup

2 tbsp olive oil
2 cups chopped onion
3 carrots, grated
3/4 tsp marjoram
3/4 tsp thyme
28 oz. chopped tomatoes
8 cups chicken broth
1 1/2 cups lentils

Recipe Directions for Jane Brody Lentil Soup

saute onion, carrot in olive oil in heavy bottomed pan. Add marjarom & thyme, saute, add tomatoes, broth, and s & p to taste. Add lentils that have been rinsed and picked over. Bring pot to a boil and then simmer for one hour. Serve with 1/2 oz of shredded cheddar per serving to make this a main dish soup
