Recipe Ingredients for Jana's Curry Chicken Thighs

8 thigh, bone and skin removed Chicken, Thigh, Meat Only
13 1/2 oz Lite
2 serving Minsley Organic Brown Rice (Costco)
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 cup, chopped Peppers, Sweet, Red
5 serving, raw Cilantro
2 oz Peanuts, All Types, Dry-roasted
3 tbsp Curry Powder

Recipe Directions for Jana's Curry Chicken Thighs

Saute chopped boneless, skinless chicken thighs with chopped peppers. Drain all oil off and add lite coconut milk. Add curry powder and let simmer for about 25 minutes. Serve over organic brown rice and sprinkle with chopped peanuts and cilantro.
