A smooth carrot bisque made ith fresh carrots, coconut milk, greek yogurt, and fresh ginger.

Recipe Ingredients for Jamie's Carrot Ginger and Coconut Bisque

32 fl oz Natural Free Range Chicken Broth
1 cup diced celery
1 medium yellow onion, diced
1 T butter
2 T minced garlic
2 T powdered ginger
480 g Light Coconut Milk
16 oz Greek Yogurt
1 T white pepper

Recipe Directions for Jamie's Carrot Ginger and Coconut Bisque

  1. In crockpot, place 3# of fresh, peeled carrots, and 32oz free range, fat free chicken broth. Set on high for 8 hours.

  2. Once carrots are cooked soft, continue with recipe.

  3. In saute pan, heat 1T butter or oil and combine 1 medium yellow onion, diced, and 1c diced celery. Add to crock pot.

  4. Mix in 2T chopped garlic, 2T powdered ginger (or use fresh if you refer, but remember to pull them out before mixing!), 1 T white pepper, 2 cans coconut milk, and 16oz greek yogurt.

  5. Using flash blender, puree all contents. Add hot water r stock as needed until you've reached a good creamy consistency.

  6. Soup is ready, but it is best if left stored overnight in refrigerator overnight. Some nice things to add if you prefer a soup with more texture: fresh roasted corn, diced carrots, or julienne snow peas.
