A tasty tuna pasta, modified to fit the ingredients that I had at the time :)

Recipe Ingredients for Jamie Oliver's "Jool's Favorite Saturday Afternoon Pasta" Modified

2 tbsp olive oil
1 medium onion
1 tsp cinnamon
2 tsp dried basil
28 oz (2 cans) diced tomatoes
12 oz (2 cans) tuna in water
16 oz rigatoni
1 tbsp lemon juice
1 tsp dried basil
1 tbsp olive oil

Recipe Directions for Jamie Oliver's "Jool's Favorite Saturday Afternoon Pasta" Modified

  1. Sautee the onion, cinnamon, and basil in the 2 tbsp of olive oil until soft (5 minutes).

  2. Drain the tomatoes and tuna, and add to the sauteed onions.

  3. Bring to a boil then reduce heat and simmer for 20 minutes.

  4. Bring a large pot of salted water to a boil and add 1 box of rigatoni pasta. Cook until al dente, or about 10 minutes.

  5. Drain in a colander, reserving some of the pasta water.

  6. Add the drained rigatoni to the tomato and tuna and stir. Add lemon juice, 1 tbsp of olive oil, and basil. If you need to loosen up the pasta, add some of the reserved pasta water.

  7. Serve.
