Jamie Oliver Classic Mince and Onion Pie from Ministry of Food

Recipe Ingredients for Jamie Oliver Classic Mince and Onion Pie

3 medium onions
2 carrots
2 stalk,+medium+7-1/2"+-+8"+long celery
2 tbsp rosemary
2 tbsp olive oil
2 tbsp,+crumbled bay leaves
500 g Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1 teaspoon English mustard
1 teaspoon Marmite (I used Vegemite - cos I'm a Happy Little Vegemite!!)
1 tablespoon Worcestershire sauce (I used one with no anchovies)
2 teaspoons flour, plus extra for dusting
40 g beef stock cubes to make one litre of stock (I used four Massell beef stock cubes, which are vegetarian and gluten-free
28 g Pastry
1 large egg or a splash of milk

Recipe Directions for Jamie Oliver Classic Mince and Onion Pie

  1. To make your mince filling:

  2. Peel and roughly chop onions, carrots and celery - don't be fussy, just get them small!

  3. Remove rosemary leaves from woody stalks and chop finely.

  4. Place a large pan on high heat, add 2 lugs of olive oil, the veggies, rosemary and bay leaves.

  5. Stir every minute for around 10 minutes until veggies have softened and lightly coloured. Stir in the mince and break up chunks.

  6. Add mustard, Marmite/Vegemite, Worcestershire sauce and 2 teaspoons flour.

  7. Dissolve the stock in a litre of boiling water and add to the pan, bring to the boil.

  8. Turn heat down and simmer with a lid slightly askew for about an hour, stirring every now and then.

  9. To make your pie:

  10. Fill a large baking dish with the mince filling and allow to cool slightly.

  11. Preheat oven to 180C/350F.

  12. Place your thawed pastry on top of the dish, running a knife around the edge to remove excess. Using a fork, press down around the pastry to crimp it and help it to seal.

  13. Make a hole in the middle of your pie with the tip of your knife. Brush the top with beaten egg or milk.

  14. Bake at the bottom of the oven for 40 minutes or until pastry is golden and crisp.
