Quick and healthy salsa - especially if made without the oil.

Recipe Ingredients for Jami Dunbar's black bean & Corn Salsa

30 1/2 oz black beans
22 oz mexicorn
2 medium tomatoes
1/2 cup green onions
1/4 cup red wine vinegar

Recipe Directions for Jami Dunbar's black bean & Corn Salsa

  1. Jami uses a lot of green onions - including the stems

  2. Add a few dashes of red hot sauce like Tobasco to the vinegar

  3. Original recipe dressing calls for 1/2 cup vegetable or olive oil with the vinegar. Jami no longer uses it

  4. Marinate for a couple of hours in the fridge.

  5. Serve with chips or crackers.

  6. Can add avocado on top right before serving.
