My variation on James Peterson's pesto recipe.

Recipe Ingredients for James Peterson's Pesto

2 cups tightly packed basil leaves
1/4 cup olive oil
2 garlic cloves, chopped
3 tablespoons pine nuts, lightly roasted
1 cup grated parmesan cheese

Recipe Directions for James Peterson's Pesto

  1. Combine basil leaves, olive oil and garlic in food processor. Pulse until garlic is thoroughly blended into the leaves (there still should be tiny pieces of basil. Do not liquify). Scoop into non-reactive bowl.

  2. Blend in pine nuts, and then cheese. Refrigerate.
