From James Peterson's great book, "Vegetables", this simple, low cal and delicious recipe is a staple in our house.

Recipe Ingredients for James Peterson's Broccoli

620 g Broccoli
3 cloves Garlic
2 tbl Olive Oil
1/2 cup Water

Recipe Directions for James Peterson's Broccoli

  1. Trim flowerettes off of broccoli stems. Peel the stems, and slice into 1/4" thick rounds. If needed, cut the flowerettes into shapes no wider than 1".

  2. Mince the garlic. Heat the olive oil in a 10" pan that has a lid, add the garlic and reduce the heat to medium. Cook the garlic for 1 minute.

  3. Add the stem rounds to the pan. Cook for 2 minutes. Add the flowerettes to the pan. Add the water and cover with the pan lid.

  4. Cook for 16-18 minutes, checking to see if the rounds have become browned. Once the rounds are browned, the dish is done. Serve either hot or cold.
