Recipe Ingredients for James Gang Bean Casserole

15 oz Kidney Beans
15 oz Navy Beans
15 oz Black Beans
15 oz Garbanzo Beans
1 medium white onion, diced
1 cup celery, diced
5 bacon
2 tblsp brown sugar
1/2 cup water or chicken broth

Recipe Directions for James Gang Bean Casserole

  1. Wash and drain beans, drop into crock-pot.

  2. Cook bacon in large skillet until very crispy, remove bacon and set aside. When cool, drain majority of bacon grease from pan and saute onion and celery until onion is golden.

  3. Add onion, celery, brown sugar and water to beans.

  4. Break bacon into small peices, add to crock-pot.

  5. Mix ingredients together with large wooden spoon. Turn on high and let cook for 3 hours stirring occasionally. Add more water if casserole becomes dry.

  6. Serve with warm corn bread.

  7. Substitute beans with your favorites or prepare dried beans before-hand.
