Recipe Ingredients for James Beard's Cookies Squid Stew

2 lb squid (calamari rings and tentacles)
2 lb potatoes, diced
1 3/10 c. water
1 3/10 c. red wine
1 medium onion
6 cloves garlic
3 tbsp olive oil
14 oz diced tomatoes
1 can tomato paste
1 pinch cumin
1 pinch allspice
1 salt
1 pinch cayenne pepper

Recipe Directions for James Beard's Cookies Squid Stew

  1. Chop onion, mince garlic. Saute.

  2. Put in stewpot with liquid, vegetables and spice. Simmer one hour.

  3. Add squid. Bring to boil, then simmer many hours. Add more liquid if necessary.
