JoAnn's Jambalaya from September 2008 issue of Southern Living. Frozen seasoning blend was not listed in Calorie Counter so I used frozen onions to get approximate value. I use the PictSweet Blend that has onions, celery, bell pepper, and parsley.

Recipe Ingredients for Jambalaya from Southern Living

12 oz smoked sausage, cut into 1/4-inch-thick slices
10 oz. or frozen vegetable seasoning blend
32 oz. low-sodium chicken broth
14 1/2 oz. or fire-roasted diced tomatoes with garlic
2 cups uncooked long-grain rice
1 tbsp Cajun seasoning
2 tbsp Worcestershire sauce
1/8 teaspoon ground red pepper (optional)
2 tablespoons thinly sliced green onions

Recipe Directions for Jambalaya from Southern Living

  1. Cook sausage in a large Dutch oven over medium-high heat, stirring frequently, 8 to 10 minutes or until browned.

  2. Remove sausage with a slotted spoon; drain on paper towels.

  3. Add vegetable seasoning blend to hot drippings in Dutch oven, and sauté 3 to 5 minutes or until thoroughly heated.

  4. Add broth, next 5 ingredients, sausage, and if desired, ground red pepper.

  5. Bring to a boil; cover, reduce heat to low, and cook 18 to 20 minutes or until rice is tender and liquid is absorbed.

  6. Top with green onions, and serve immediately.
