Recipe Ingredients for Jambalaya Risotto

1/2 medium onion
1 cup celery
14 oz Turkey smoked sausage
1 1/2 cups cooked brown rice
1 cup chicken stock
1 cup water
12 oz cannellini beans
1 1/2 cups cooked chicken breast
1/4 green onion

Recipe Directions for Jambalaya Risotto

Cut up veggies and saute using cooking spray. Add the turkey smoked sausage.(Even the lite version is high in calories so you can opt to leave out the sausage at any time. 3.5 oz approximately 192 calories for each serving.) Add rice and pour in chicken stock and 1 cup of water. Add in cooked chicken and the can of cannellini beans. Let simmer for 25 minutes, add green onion at end of cooking cycle. Serve. Makes 4 servings as main meal.
