Cajun chicken and sausage rice dish

Recipe Ingredients for Jambalaya

510 g Chicken Thigh Fillets
100 g chorizo sausage
1 onion
3 cloves garlic
2 stalks celery
45 red capsicum
48 pepper red chilli
250 g rice
400 g tinned tomatoes
500 g water
1 chicken stock cube
1 pinch cayenne pepper
1 pinch pepper
1 pinch salt

Recipe Directions for Jambalaya

  1. Slice the chicken thighs into 1 cm thick slices and dust with salt pepper and cayenne pepper. Slice chorizo.

  2. Fry chicken and Chorizo in deep casserole pan for 5 minutes.

  3. Slice onions, garlic, capsicum, red chilli and celery. Add them to the meat and fry for a furhter 5 minutes.

  4. Add tinned tomatoes and stock and bring to boil.

  5. Add rice and simmer, covered, for about 15-20 minutes or until rice is soft and correct consistency achieved.
