Scallops, shrimp, cajun sausage combined into one fabulous dish!

Recipe Ingredients for Jambalaya

8 oz. scallops
16 oz. shrimp, peeled
8 oz. sausage, cajun
2/3 cup cannellini beans, cooked
14 1/2 oz. tomatoes, stewed
1 bell pepper, large
1 onion, large
4 oz. brown rice
3 tbs. olive oil, extra virgin

Recipe Directions for Jambalaya

Chop bell pepper and onion. Saute in a skillet with the olive oil. Add 2 cloves crushed garlic, 1 tsp. dried oregano, 2 tsp. cajun spice mix, 1 tsp. salt, and 1/2 tsp. pepper. Cut sausage links into 1/2 inch thick slices. Add to pan along with shrimp and scallops. Keep skillet over high heat and saute sausage and seafood until shrimp is pink and scallops are opaque. Add stewed tomatoes and beans. Heat through and adjust seasonings. Add rice and stir to combine.
