Recipe Ingredients for Jambalaya

1 tbsp cooking oil
2 cloves garlic, chopped
1/2 onion, chopped
1 medium zucchini, diced
1/2 red bell pepper, diced
200 g chicken, cooked and diced
350 g (1 can) diced tomatoes
1 cup chicken broth
1 1/2 cups long grain brown rice

Recipe Directions for Jambalaya

  1. Stirfry all vegetables in oil

  2. Add chicken to skillet

  3. Immediately after, add tomatoes (with liquid) and chicken broth, then brown rice

  4. Simmer until all liquid is absorbed and rice fluffy (add more liquid if required)

  5. Season as desired with chili powder, paprika, pepper, etc.
