A whole lotta vegetables with some spicy, hearty goodness!

Recipe Ingredients for Jambalaya

2 tbsp canola oil
3/5 lb red onion
2 tsp minced garlic
1 1/5 lb. boneless, skinless chicken breast
9 oz shrimp, cooked
275 grams chorizo chicken sausage links
1/10 lb banana pepper
13/20 lb green pepper (1/4 reserved)
4 oz. sliced mushrooms (1/4 reserved)
15 oz. can diced tomatoes, no salt added
3 oz. tomato paste
32 oz crushed tomatoes
1 oz Worcestershire sauce
1 cup instant brown rice
1 tsp. Italian seasoning
1 tsp. black pepper
1 tsp cumin
1 tsp chili powder
1 tsp allspice
3/4 cup beer
2 tbsp barbecue sauce

Recipe Directions for Jambalaya

  1. Put a large pot, such as a Dutch oven, on medium-high heat. Pour in the oil.

  2. While the oil is heating, chop the onions, chicken, and sausage into pieces (1/4 inch slices for the sausage).

  3. Add the onions to the pot first and let them brown for a bit, then add the meat. Throw in the garlic and stir, letting the meat and sausage brown.

  4. Stir occasionally while chopping up the banana pepper, zucchini and bell peppers. Chop the hot peppers as finely as possible, and add them first, then the zucchini and bell pepper. You can also toss in the mushrooms at this time.

  5. Stir, and reduce the heat to medium-low.

  6. Add in the diced tomatoes and stir.

  7. Next, stir in the tomato sauce, tomato paste, and Worcestershire sauce.

  8. Add the herbs and spices.

  9. Once it's been given a good stir, let it sit at a gentle boil for at least 30 minutes. As with all good soups and stews, the longer you let it simmer, the better the flavors will meld.

  10. For the rice: cook rice according to package directions.

  11. While rice is cooking, saute remaining peppers and mushrooms.

  12. Add the peas and corn.

  13. When rice is cooked, drain, pour back into pot, add vegetables, and season to taste.

  14. Serve jambalaya over rice.
