Spicy chunky Jambalaya with turkey sausage and shrimp.

Recipe Ingredients for Jambalaya

4 links Turkey Italian Sausage
1 lb Shrimp
1 large Onion diced
2 medium Green Bell Peppers
3 celery stalks
1 teaspoon Olive Oil
1 1/3 cups long-grain white rice
3 cups organic chicken broth
1 teaspoon cayenne
15 1/4 oz. diced tomatoes
15 1/4 oz. kidney beans rinsed
3 scallions
1 teaspoon Salt
1 tablespoon freshly ground black pepper

Recipe Directions for Jambalaya

  1. Cut sausage into 1/4-inch-thick slices and chop onion, bell pepper, and celery. In a dry 2 to 2 1/2-quart heavy saucepan brown sausage over moderately high heat, stirring frequently, and with a slotted spoon transfer to paper towels to drain. Pour off any fat from pan and in pan cook vegetables in oil over moderate heat, stirring occasionally, until onion is softened. Stir in rice, broth, and cayenne and bring to a boil. Add tomatoes and kidney beans. Cover pan and cook rice over low heat 7 minutes. Add Shelled shrimp and continue cooking for 8 minutes until rice is tender.

  2. Remove pan from heat and let rice stand, covered, 5 minutes. Thinly slice scallions. Fluff rice with a fork and stir in sausage, scallions, and salt and pepper, to taste.
