Spicy rice dish. Best served hot with a dollop of sour cream. Spices may be adjusted to taste, as this is rather spicy.

Recipe Ingredients for Jambalaya

1 lb boneless chicken, cubed
1 lb (hot) smoked sausage (andouille or chaurice)
1 lb diced smoked ham
1 large onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
2 cups celery, chopped
18 oz Tomatoes Paste
28 oz tomatoes, peeled, seeded, and diced
8 cups chicken stock
2 teaspoons cayenne
2 teaspoons black pepper
1 teaspoon white pepper
1 teaspoon oregano
1/2 teaspoon thyme
1 tsp bay leaves
1 Salt to taste
4 cups rice

Recipe Directions for Jambalaya

  1. Brown the chicken, seasoning with a little salt/pepper/cayenne. Tear or cut meat into bite sized pieces.

  2. Brown the sausage in pot and pour off fat.

  3. In same pot, saute onions, garlic, peppers, and celery in oil until onions become transparent.

  4. Add tomato paste, stirring frequently to prevent burning.

  5. Once tomato paste has "browned", add 2 cups of stock and stir, making sure to scrape bottom.

  6. Add the seasoning, tomatoes, and salt to taste.

  7. Cook about 10 minutes.

  8. Add meat back in and cook 10 more minutes.

  9. Check seasonings, then add rice, cooking for 20-25 minutes (covered), or until rice has absorbed all of the liquid and is cooked through.

  10. Uncover, cook for about 10 more minutes, stirring frequently, waiting for the right consistency.
