Lighter version of a Cajun Classic

Recipe Ingredients for Jambalaya (modified HG) dlw

1 tbsp chopped Onions
2 serving Big Easy Chicken Sausage with Green Onion
1 cup, diced Celery
136 grams Peppers, Sweet, Green
2 clove Garlic
14 1/2 oz Tomatoes
1 tsp, leaves Thyme, Dried
1 tsp Oregano, Ground
1/2 cup Brown Rice
7 oz Chicken (Rotisserie)8/4
1 cup Generic - Homemade Chicken Stock (Fat Skimmed, No Salt)

Recipe Directions for Jambalaya (modified HG) dlw

  1. Saute Sausage till slightly brown

  2. add onions till translucent

  3. add celery, bell pepper and garlic.

  4. Saute for 5 minutes.

  5. Add can tomatoes, Thyme, Oregano.

  6. Bring to boil for 3 minutes and add rice.

  7. Place diced cooked chicken on top of rice

  8. and cover. Let cook for 20 minutes on low heat.

  9. Stir occasionally after 10 minutes of cooking.

  10. Remove cover and raise heat cook until desired consistency.

  11. Then cover and let sit for 10 more minutes.

  12. Enjoy.
