Recipe Ingredients for Jamaican Spinach Soup

4 tbsp Extra Virgin Olive Oil
1 cup chopped Red Onion
2 stalk, medium (7-1/2" - 8" long) Celery
4 clove Garlic
2 tsp Ginger Root
1 tbsp Full Circle Honey Organic Pure
2 tsp Salt, Table
1 grams Turmeric, Ground
1 grams Allspice, Ground
1 grams Nutmeg, Ground
2 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
4 cup, chopped Squash, Summer, Zucchini, Includes Skin
200 grams Spinach
1500 grams Joubere Organic Vegetable Stock
1 medium raw Bell Pepper Red

Recipe Directions for Jamaican Spinach Soup

  1. Heat the oil in a large pot over medium heat. Stir in onion, celery, garlic, ginger, and sugar. Cook 5 minutes, until onion is tender. Season with salt, turmeric, allspice, and nutmeg. Mix in potatoes and zucchini, and pour in the vegetable stock. Bring to a boil, reduce heat to low, and simmer 10 minutes, or until potatoes are tender.

  2. Remove soup from heat, season with cayenne pepper, and stir in spinach. Using a hand blender, blend soup until smooth. Garnish with red bell pepper to serve.
