Recipe Ingredients for Jamaican Rice and peas without coconut milk

1 lb raw kidney beans
2 lbs brown rice
2 tbsp olive oil
3 yellow onions
3 Scallions
2 tbsp thyme
1/2 tbsp salt
1/2 tbsp black pepper
1 tsp. allspice
1/2 tbsp grated ginger root

Recipe Directions for Jamaican Rice and peas without coconut milk

  1. Soak peas until partially tender

  2. boil in same water until a little more tender

  3. add 2 tablespoon of olive oil all seasoning and cook some more for about 5 minutes. Then add rice. Transfer to large baking dish, cover tightly and bake at 350 degrees for 30 minutes
