A "Jamaican-ish" recipe that goes well with grilled chicken or pork.

Recipe Ingredients for Jamaican Rice and Peas

1 tsp canola oil
1/2 cup diced onion
1 tsp minced garlic
1 tsp curry powder
1 tsp cumin
1/2 tsp coriander
3/4 cup brown rice
15 oz. red beans
8 oz. pineapple tidbits
1 cup lite coconut milk

Recipe Directions for Jamaican Rice and Peas

Heat oil in pot. Add garlic and onions and sautee for a few minutes, until soft. Add spices and cook for another minute more. Add coconut milk, juice from pineapple and enough juice from beans to equal 1 3/4 cups liquid. Bring to a boil. Add rice and beans. Reduce heat to low, cover and simmer until liquid is absorbed (about 20 minutes). Add pineapple. Let sit for 5-10 minutes before serving.
