Yum!!! Serve with Jerk chicken or turkey, or roast peppers with a bit of jerk seasoning on...or both!

Recipe Ingredients for Jamaican Rice N Peas

225 g wholegrain rice
15 g thyme
240 g kidney beans, canned
1 tbsp olive oil
1 red onion
1 red chilli pepper
50 g creamed coconut
1 tsp sea salt
1 tbsp black pepper

Recipe Directions for Jamaican Rice N Peas

  1. Boil rice in salted water

  2. Add chopped thyme to rice

  3. 10 mins before end of rice cooking time saute chopped onion and chilli

  4. 5 mins before end of rice cooking time add kidney beans to rice

  5. Drain rice, thyme and kidney bean mix and stir through the creamed coconut

  6. Add the onion and chilli mixture and mix well

  7. Season with remaining salt and the pepper
