Recipe Ingredients for Jamaican Red Bean Stew

822 grams Kidney Beans, Organic
14.5 oz Diced Tomatoes, No Salt Added
14 oz Blue Dragon Light Coconut Milk
1.2 serving Natural Foods - Organic Vegetable Broth
1 medium Sweetpotato
2 cup, chopped Carrots
3 clove Garlic
1/4 cup chopped Scallions
2 tsp Curry Powder
1 tsp Allspice, Ground
0.5 Teaspoon Thyme

Recipe Directions for Jamaican Red Bean Stew

  1. Mince Garlic and place in slow cooker on high while preparing other ingredients.

  2. Chop carrots, sweet potato, and green onion and add to slow cooker.

  3. Drain tomatoes and add to slow cooker

  4. Mix in spices as well as red pepper flakes and stir.

  5. Add coconut milk, vegetable broth, and kidney beans (rinsed and drained).

  6. reduce heat and cook on low for 6-8 hours
