Recipe Ingredients for Jamaican Jerk Pork

1 tbsp brown sugar
1 tbsp granulated garlic
2 tsp black pepper
2 tsp allspice, ground
2 tsp ginger, ground
1 tsp kosher salt
1 tsp onion powder
1 tsp dry mustard
1 tsp nutmeg, ground
1 tsp cinnamon, ground
3 lb pork loin roast
1 tbsp vegetable oil
1/2 cup brewed coffee
1/4 cup orange juice
3 tbsp molasses
2 tbsp jalapeno, minced
1 tbsp garlic, minced
2 tbsp tapioca
2 lb sweet potato
1/2 cup skim milk
1/4 cup orange juice
2 tbsp butter
1 tbsp brown sugar
1/4 tsp allspice, ground
1/4 tsp ginger, ground

Recipe Directions for Jamaican Jerk Pork

  1. Combine ingredients up to pork roast for rub.

  2. Saute rubbed roast 8-10 minutes in oil. Put in slow cooker.

  3. Combine next ingredients up to sweet potatoes for sauce. Use to deglaze pan, then add to slow cooker.

  4. Cut sweet potato into 2-in cubes and arrange around roast.

  5. Cook on high for 3 hours or low for 4 hours.

  6. Put sweet potatoes in large bowl. Add remaining ingredients and mash.
