Recipe Ingredients for Jamaican Jerk-Kabobs

2 green onions, chopped
1 peppers jalapeno
3 tsp extra virgin olive oil
1 tbsp ginger root, chooped peeled
2 tbsp white wine vinegar
1 tsp ground allspice
1 tsp thyme leaves, dried
1/2 tsp salt
1 pound boneless skinless chicken breast
2 red peppers, chopped

Recipe Directions for Jamaican Jerk-Kabobs

  1. In a blender in high speed blend the green onions, jalapeno chile, ginger, vinegar, allspice, thyme, 2 tbsp of oil, and salt.

  2. Place chicken chunks into a zip tight plastic bag with marinade, turning to coat. Marinate in the refrigerator for 30 min.

  3. In a small bowl toss the red pepper pieces with 1 tsp of oil. Preheat the broiler, on 4 all metal skewers, alternately thread chicken and red pepper, place kabobs on rack in broiling pan, brush kabobs 10 minutes or until chicken is no longer pink inside.
