Tasty Jamaican jerk chicken (orginal recipe yields 4 servings and is for a whole cut up chicken. i cut recipe in half and use chicken breast)

Recipe Ingredients for Jamaican Jerk Chickien

480 grams Atria Chicken Filet
25 grams Scotch Bonnet Chile Peppers
1 pepper Peppers, Hot Chili, Red
1 pepper Peppers, Hot Chili, Red
1 medium (2-1/2" dia) Onions
4 clove Garlic
1 tbsp, ground Thyme, Dried
1 tbsp Allspice, Ground
15 grams Dan Sukker Sugar
1 tbsp Salt, Table
1 tsp Pepper, Black
1 tsp Cinnamon, Ground
1 tsp Nutmeg, Ground
1 tsp Ginger, Ground
85.1 grams Extra Virgin Olive Oil
3 oz Less Sodium Soy Sauce In Dispenser
2 lime yields Lime Juice
4 fl. oz brazil orange juice
4 fl oz White Vinegar, Distilled, Organic

Recipe Directions for Jamaican Jerk Chickien

  1. 500 grams or 1/2 LB chicken breast

  2. 2 medium onions, chopped

  3. 3 habanero/scotch bonnet peppers (or whatever peppers you have available)

  4. 4 garlic cloves

  5. 1 Tbsp. thyme

  6. 1 Tbsp. ground allspice

  7. 1 Tbsp. sugar

  8. 1 Tbsp. salt

  9. 2 Tsp. ground black pepper

  10. 1 to 2 Tsp of the following (to taste)

  11. -ground cinnamon

  12. -nutmeg

  13. -ginger

  14. 1/4 cup olive oil

  15. 1/4 cup soy sauce

  16. Juice of 1-2 limes

  17. 1/2 cup orange juice

  18. 1/2cup white vinegar

  19. Chop the onions, garlic and peppers. These do not need to be chopped too fine as they will be liquidised by the blender.

  20. Blend all of the ingredients (excluding the chicken) in a blender to make the jerk sauce.

  21. Rub the sauce in to the meat, saving some for basting and dipping later.

  22. Leave the chicken in the fridge to marinade overnight. (If using whole chicken, cut it into four piece before marinating)

  23. Bake in the oven for 30 minutes, turn the meat then bake for a further 30 minutes.

  25. Grill the meat slowly until cooked, turning regularly. Baste with some of the remaining marinade whilst cooking. For best results, cook over a charcoal barbeque (ideally over a rack of pimento wood).

  26. Chop each quarter chicken portion in to 5 or 6 smaller pieces using a heavy cleaver.

  27. Use a wooden spoon (or something similar) to hold the chicken in place whilst chopping and NOT YOUR HAND (you will be chopping with enough pressure to cut through bone!!!)
