1 large yellow onion, diced
3 cloves garlic, minced
3 c cooked brown rice
32 ounce adzuki beans, drained
15 ounce lite coconut milk
2 tbsp fresh cilantro
1 salt and pepper to taste

  1. saute onion and garlic in vegetable broth in a large pan

  2. add cooked rice, beans, cilantro, coconut milk

  3. simmer, cover, and cook over low heat until moisture has evaporated (15m)
