Jamaican corn fritters (sugar-free). Nutritional information based on frying in 1/2 c [4 oz / 24 tsp] sunflower oil and observation that 1.5 oz / 9 tsps of oil are absorbed in frying process. Recipe Ingredients for Jamaican Festival (Corn Fritters)

0.5 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 Teaspoon Baking Powder
1 cup Cornmeal, Degermed, Enriched, Yellow
1 tsp Nutmeg, Ground
0.5 fl oz Lime Juice, Canned Or Bottled, Unsweetened
0.5 cup (8 fl oz) Water
9 tsp Unico Sunflower Oil
1 tbsp Butter

Recipe Directions for Jamaican Festival (Corn Fritters)

  1. Melt 1Tbsp butter and set aside to cool to room temp.

  2. Sift together 1/2 cup flour with 1 tsp baking powder.

  3. Mix in 1 c cornmeal and 1 tsp nutmeg.

  4. Add 1/2 c water and 1 Tbsp lime juice to the butter and mix.

  5. Add wet mixture all at once to dry mixture and stir just enough to form consistent dough.

  6. Heat 1/2 c vegetable frying oil in small pan while allowing dough to sit 2 minutes.

  7. Form dough into fingers (about 10) and then fry in the oil.

  8. Allow to cool on paper towels to absorb any excess oil before serving.
