Recipe Ingredients for Jamacan Red Beans and Rice

1 tbsp olive oil
1 large onion, finely chopped
2 tbsp garlic, mined
2 cups cooked brown rice
4 cups red beans
15 ounces coconut milk
1/2 tsp thyme
1 salt and pepper to taste

Recipe Directions for Jamacan Red Beans and Rice

  1. Heat the oil in a soup pot. Add the onion and saute over med-low heat until translucent. Add the garlic and continue to saute until the onion is golden.

  2. Add the rice, beans, coconut milk, and thyme. Bring to a simmer, then cover and cook over low heat until most of the coconut milk is absorbed, about 15mins. The mixture should be moist but not liquidy. Season with salt and pepper.

  3. Serve with plantains or veggies (opt).
