Jam-Filled Muffins Recipe

Basic, thick muffin batter encases a pocket of hot strawberry jelly - delicious!

Recipe Ingredients for Jam-filled muffins

3 cups flour
1 cup sugar
4 t baking soda
1 t salt
2 eggs
1 cup milk
1/2 cup corn oil
24 t strawberry jam

Recipe Directions for Jam-filled muffins

Mix the first 4 ingredients together and create a "well" in the center of the bowl. In a separate bowl, combine the 2 eggs and lightly beat, then add the milk and oil. Pour liquid ingredients into the well of the dry ingredients and mix until just moistened. Line muffin trays with paper liners, and fill cups 1/3 full of mix (just to line the bottom). In each cup, place 1 teaspoon of jelly in the middle and then use more mix to cover the jelly. Bake at 400 degrees for 10-20 minutes. I baked mine on the third shelf from the top and they took about 14 minutes per pan. Enjoy!
