Spicy, healthy cornbread muffins that go well with anything. Last several days. Just as good when split open and toasted.

Recipe Ingredients for Jalapeno Squash Corn Muffins

2.75 cup All Purpose Flour
4 tablespoons Yellow Corn Meal
2 Teaspoon Baking Powder
0.5 tsp Salt, Table
1 cup Fat Free Milk
1 cup, sliced Squash, Summer, All Varieties
1 large Egg, Whole
4 tbsp Fixin's Relish

Recipe Directions for Jalapeno Squash Corn Muffins

Spray approximately 12 muffin tins. Preheat oven to 350 or so. Mix dry ingredients. Whisk the egg and milk and add to the dry ingredients. Stir in about 1 cup of shredded yellow squash. Mix in the jalapeno relish. Pour into the muffin tins. This may make more or less than twelve muffins. Bake until the tops spring back when touched.
