Recipe Directions for Jalapeno Gametime Poppers

  1. I hate that you can't order the ingredients in the proper order. See my recipe for Boursin Style Garlic/Onion spread to make that. http://caloriecount.about.com/boursin-style-garlic-onion-spread-recipe-r1151292 I used about 7oz of the block in this 17 pepper batch. Each serving is one full pepper, or two halves.

  2. Mix all ingredients but peppers and paprika in a bowl. Soften cheese to room temp first or microwave 30 seconds.

  3. Wash and slice Jalapeņo peppers in half lengthwise. I like to leave the stems to use as little handles, plus it keeps the cheese from melting out the end.

  4. Use a spoon to scrape the seeds and membrane out of the pepper halves. Use plastic gloves if you have them. The more you scrape out the milder they will be. If you like them hot just get the seeds out.

  5. Option: Cut the tops off and use a potato peeler to core the seeds out. Cook standing up in a rack or plug with an olive.

  6. Spoon the mix into each half and smooth down. I usually try for a minimal amount to keep calories down.

  7. Lay halves in a baking sheet and sprinkle the Paprika on top. For a bit more heat use Cayenne powder or Chilpotle powder.

  8. Bake at 300deg for 30-40 minutes. The longer you bake them the softer they get. I like a bit of crunch left in the peppers. These also work great on the grill, especially if you have a smoker fired up!

  9. Option. Try replacing the cheddar with blue cheese, mozzarella, jack, queso quesadilla, or queso asadero.

  10. Option: I used Bac n Buds for a vegetarian bacon taste. These taste great eliminating those. Or go the other way and use real bacon, or some smoked pulled pork.

  11. Option: Put a green olive with pimento on the top with the pimento 'eye' looking up. If you cut the ends off the peppers this will keep the cheese from melting out. It will add a good bit of fat to the recipe. I usually do this to a quarter of my batch or so.
