Recipe Ingredients for Jalapeno crawfish cornbread

8 oz cheddar cheese
1 can creamed corn
1 lb shrimp
1 1/2 cup corn muffin mix
1 cup bell pepper
1/4 cup jalapeno pepper
1 tsp salt
1 cup milk
1/4 cup corn oil
1/2 cup onion
1/4 cup scallion
3 eggs

Recipe Directions for Jalapeno crawfish cornbread

  1. 1 lb of crawfish tails (subtitute with crab meat or shrimp if you want), 3 eggs, 1 box of Jiffy Corn Muffin mix (It's 1.5 cup of cornmeal + 3 tsp baking powder + 1/2 tsp of baking soda), 1 1/2 cup of mild shredded cheddar cheese, 2 jalapeno pepper, 1 can of creamed corn, 1/2 cup of red bell pepper chopped, 1/2 cup of chopped scallion. 1/3 cup of oil, 1 cup of milk, 1 medium onion chopped. 1tsp of salt+Tony Charcherey mix.

  2. Saute onions and bell pepper with a small amount of butter until the vegetables are translucent. Add jalapeno pepper and set aside.

  3. Mix together all other ingredient. Then addin the cooked onion and pepper. Then stir in the crawfish or crab gently.

  4. Pour in a lightly greased (or Pam spray) 13x9 pan and bake in 400 degree oven for 40 minutes.
