Lowfat buttermilk and nonfat sour cream add moisture to this crumbly cornbread. Jalapeno peppers and corn kernels contribute an extra layer of flavor. There is supposed to be 2 ounces reduced-fat Cheddar cheese but I left it out by accidentally.

Recipe Ingredients for Jalapeno Corn Bread

1 cup yellow cornmeal
1/2 cup all purpose flour
1 tbsp sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp black pepper
1 cup low fat buttermilk
1/2 cup fat free egg substitute
1/3 cup nonfat sour cream
2 tbsp canola oil
1 jalapeno pepper, minced
1/2 cup frozen corn kernels

Recipe Directions for Jalapeno Corn Bread

  1. Mix dry ingredients together in a large bowl.

  2. Mix remaining ingredients together in a smaller bow.

  3. Make a well in the dry ingredients and pour remaining ingredients into the dry ingredients. Stir just until mixed.

  4. Bake at 400 degrees for 25 minutes.
