This is a terrific brunch dish. Prepare mexican chorizo sausage as an accompaniment for a complete spiced-up breakfast

Recipe Ingredients for Jalapeno-Chedder Frittata

12 eggs
1/4 cup half-and-half
1/2 tsp salt
1 black pepper
1/2 cup sliced jalapenos
2 tbsps butter
2 1/2 cup shredded chedder cheese

Recipe Directions for Jalapeno-Chedder Frittata

  1. Preheat oven to 350

  2. Combine the eggs, half-and-half, salt, and pepper in a medium-sized mixing bowl. Use an electric mixer to beat until very light.

  3. Pat the jalapeno slices dry with a paper towel. Melt the butter in a medium-sized nonstick skillet over medium heat. Scatter the jalapenos evenly on the bottom of the pan. Sprinkle evenly with the cheese.

  4. Pour the eggs over the cheese in a pan. Place the pan on a rimmed baking sheet and bake for 20-25 minutes, until just firm. Let cool for several minutes, until set, before removing from the pan. Cut into wedges and serve hot.
