I didn't have the ingredients for chipotle peach chicken, so I did some experimenting. Lovely light summer dish.

Recipe Ingredients for Jalapeno Apricot Chicken

8 oz Apricot Preserves
0.25 cup Lime Juice
2 pepper Peppers, Jalapeno
0.125 cup Coriander Leaves
32 oz Chicken
1 clove Garlic
0.5 tsp Cumin

Recipe Directions for Jalapeno Apricot Chicken

  1. Before chopping cilantro, for more flavor, beat it with a mallet or rolling pin to release the oil from the leaves.

  2. In 1-quart saucepan, heat preserves on low, stirring occasionally, until melted.

  3. Use a garlic press to smash garlic directly into saucepan.

  4. Stir in remaining ingredients, except chicken.Heat until just boiling, then remove from heat.

  5. Remove 1/2 cup of jalapeno apricot sauce, and refrigerate until ready to use to glaze grilled chicken.

  6. Transfer remaining sauce to ziplock bag or covered bowl, and marinate chicken at least 3 hours (overnight is better)

  7. Grill chicken over hot coals, or on gas grill set to medium, until no longer pink inside. Baste frequently with marinade. Discard remaining marinade upon completion of grilling.

  8. Remove from grill, cover with foil, and let rest 5-10 minutes.

  9. While chicken rests, simmer remove reserved 1/2 cup japaleno apricot sauce from refrigerator

  10. and heat over medium, stirring frequently, until it just begins to boil.

  11. When ready to serve, plate chicken and pour 1-2 TBSP of sauce over the top.
