These enchiladas are easier to make than traditional enchiladas

Recipe Ingredients for Jaime's layered enchiladas

24 corn tortillas
32 oz red enchilada sauce
32 oz green enchilada sauce
18 oz chicken breasts, boiled
8 cups monterey jack cheese, finely shredded
8 cups cheddar cheese, finely shredded
16 oz fat free cottage cheese
16 oz fat free sour cream
1 package (10 oz) frozen chopped spinach
4 cups chicken broth
1 tablespoon chili powder (optional)

Recipe Directions for Jaime's layered enchiladas

  1. Preheat oven to 375 degrees.

  2. Boil 6 chicken breasts until cooked through. Remove from heat. Set aside 4 cups of the broth and drain the rest. Shred chicken.

  3. Combine 4 cups of chicken broth with the red and green enchilada sauce and bring to a simmer.

  4. Defrost and drain spinach.

  5. In a bowl, combine shredded chicken, 6 cups of cheddar, 6 cups of moneterey jack, spinach, cottage cheese, and 8 oz of sour cream.

  6. In a large 9 x 13 x 2 baking pan, spread a layer of enchilada sauce mixture.

  7. Next, spread a layer of 6 tortillas. Cover with a thin layer of the chicken mixture. Then cover with a layer of enchilada sauce mixture. Repeat layering 2 more times.

  8. On top layer of tortillas, spread the remaining 2 cups of cheddar and 2 cups of monterey jack cheese (and optional chili powder) and pour in the remaining enchilada sauce mix.

  9. Place in oven for 20 minutes or until cheese is melted and bubbly.

  10. Serve with a dollop of remaining sour cream on top.

  11. Can also be made vegetarian by removing chicken and replacing chicken broth with vegetable broth.
