"Jag", short for jagacita, is a portuguese rice dish, usually served as a side with meat (awesome with roast pork!). Sometimes, instead of the peas, I will chop up either linguica or chourico and put that in instead. (The nutritional info is for the peas.) This is a family recipe that was passed down from my grandmother (father's mom) to my mom and now me - and passing it down to my kids! This is a favorite of ours. 1 serving = approx 1/2 cup, cooked

Recipe Ingredients for Jag Rice

1 can peas
1/2 small onion
2 tbsp butter
2 cups white rice
1 tbsp paprika
1 tsp crushed red pepper
4 cups water

Recipe Directions for Jag Rice

  1. Melt butter in medium size pan on low to medium heat.

  2. Add diced onions and saute until soft. Add paprika, crushed red pepper and peas (drain water from the can before adding it to the pan).

  3. Stir well.

  4. Add the water, then the rice.

  5. Put cover and reduce heat to low.

  6. Cook until rice is done which is usually about 15 minutes or so. Do not stir this until the rice is cooked.

  7. Stir to mix thoroughly.

  8. Serve.
