Veggie Stew with Chicken (or veggie) broth.

Recipe Ingredients for Jacquie's Veggie Stew

16 oz. Mixed Vegetables
1 Canned Diced Tomatoes
2 small Red Potatoes
2 cups Chicken Broth
3 cups Water
1 clove Garlic
1 tsp Rosemary
1 tsp Basil
1 tsp Oregano
1 tsp Pepper
1 tsp Salt

Recipe Directions for Jacquie's Veggie Stew

  1. Boil Potatoes until medium tender. Drain and return to pot.

  2. Add Chicken Broth, water, mix vegetables and tomatoes. Let cook on medium heat for 5 minutes. Add more water and chicken broth (or veggie broth) for more of a soup than a stew.

  3. Add seasonings (more or less to taste...this is only my estimate)

  4. Continue to cook on medium heat until potatoes are soft (about 20 minutes).
