My Mom's recipe, Awesome taste but probably the reason I need to lose a few because I eat so much w/ my mashed potatos :)

Recipe Ingredients for Jacqie's Meatloaf

2 lbs. extra lean ground beef
2 eggs
1/3 c parmesan cheese, grated
1 medium onion, minced
3/4 c bread crumbs
1 tsp salt
1 tsp pepper
1 tsp parsley

Recipe Directions for Jacqie's Meatloaf

  1. combine all ingredients in large pot

  2. mix forever until residue starts to stick to sides of pots (fat from meat mixture) it should be done

  3. shape into loaf, pounding against counter to remove all air pockets

  4. place in large baking dish

  5. add 1/2 inch water to bottom

  6. cover with foil

  7. bake at 350 for 1hr

  8. remove foil and bake 15 more minutes until browned
