Ceviche is a wonderful, very fresh, citrusy and yummy summer dish. We eat for dinner in hot weather. It is almost addictive! Ceviche is served in a variety of way in the US and Mexico. This one has shrimp, but you can use a variety of fish such as snapper, flounder, redfish or catfish. It works well with a serving of rice on the side. We put Frank's Red Hot Sweet Chili sauce on the rice - gives a sweet taste to counter the citrus of the Civeche.

Recipe Ingredients for Jack's Lake Travis Shrimp Ceviche - from Low-Fat Mexican Cooking

1 1/2 lbs shrimp, cleaned, chopped into bite-size pieces
201 g limes, 3 2" fruits
174 g lemons, 3 medium fruits
246 g tomatoes, 2 medium, chopped
1/2 cup cilantro leaves, chopped
110 g onion, medium, chopped
3 g garlic, 1 clove, chopped
6 g serrano pepper, 1 small, finely chopped
15 about 5 olives
1 T olive oil
14 g Sauce, Ready-to-serve, Pepper, Tabasco, optional
67 g lime, one to use before serving
1 Salt and Black Pepper to taste

Recipe Directions for Jack's Lake Travis Shrimp Ceviche - from Low-Fat Mexican Cooking

  1. Cut shrimp or fish into 1/2" or smaller pieces and place in glass dish or jar.

  2. Pour juice of limes and lemons over the shrimp or fish. It should cover most of the fish. Place in refrigerator for a least 5 hours. It can be marinated overnight. We think it gets better.

  3. Remove from refrigerator and drain of all the juice. Completely draining the juices results in a fresh-tasting ceviche with a subtle citric flavor rather than pungeant flavor.

  4. Chop tomato, cilantro, onion, garlic, serrano pepper and olives into small pieces and mix with shrimp or fish.

  5. Add olive oil, pepper sauce (optional) - we like Frank's Red Hot - salt and black pepper.

  6. Squeeze lime over ceviche, stir and serve.
