Use up all the squash your garden has been putting out!! Any variety of squash will work.. patty pan, zucchini or yellow.

Recipe Ingredients for Jackies Summer Veggie Bake

1 onion, sliced thin (I like using Vidalia onion for this)
3 cups squash, sliced thin
28 oz can diced tomatoes, drained (or use sliced fresh tomatoes)
1/4 cup (or 4 tablespoons) parmesan cheese
2 tsp olive oil (or use veggie oil spray)

Recipe Directions for Jackies Summer Veggie Bake

  1. Saute onions in pan coated with veggie oil spray until tender.

  2. drain extra juice from tomatoes. Place in bottom of 13x9 pan which has been sprayed with vegetable oil spray.

  3. layer squash over tomatoes.

  4. layer onions over squash.

  5. sprinkle parmesan cheese over everything.

  6. bake at 350 for 1 hour or until veggies are tender.
