Stir fry with veggies and chicken thighs over rice noodles

Recipe Ingredients for Jackie's Stir Fry

1 c crimini mushrooms,
2 c eggplant,
1 1/2 c frozen spinach,
2 c snow peas,
2 c brocolli,
2 c cauliflower,
8 ounces tofu,
1 lb chicken thighs
2 1/2 c rice noodles
2 T extra virgin olive oil
1/6 c teriyaki sauce
4 clove garlic
1/4 c shallot
1/2 c soy sauce

Recipe Directions for Jackie's Stir Fry

  1. Marinate chicken thighs in 1/2 cup Kikkoman teriyaki sauce. Discard remaining sauce.

  2. Stir fry marinated chicken. Set aside.

  3. Stir fry veggies, add chicken, add soy sauce.

  4. Serve over rice noodles.
