a great modification of the regular vegetable pulao to make it more healthier

Recipe Ingredients for jaanI_pulao

2 cups brown rice
2 onions
1 cup carrots, diced(usually 2 numbers medium sized )
1 cup green peas (green ,I use frozen)
1 cup chopped cabbage (chopped,about 1/2 inch pieces)
2 green bell peppers, diced (1X1 inch, approximate donot chop them smaller could be bigger if you like )
1 potato, diced (1x1 inch)
1 cup cut green beans (1 to 1 1./2 inches length)
1 cup chopped spinach
1 cup cooked beans (boiled ,chickpeas, rajma or peas ? from a can )
1/2 cup lima beans (I use frozen)
1/2 cup baby corn (I use frozen)
1 tsp garam masala ( pulao masala or a mixture of dhana jeera and chili powder,turmeric powder)
1 tsp salt
2 tbsp. oil

Recipe Directions for jaanI_pulao

  1. Cook the rice with turmeric.

  2. Stir fry the vegetables lightly. Add 1 cup water, cover and cook.

  3. Add salt, and spices.

  4. Mix the rice and the cooked vegetables together.

  5. serve with yogurt chutney
