An edited version of Emeril Lagasse's It's a Good Morning Muffins recipe. I don't own this.

Recipe Ingredients for It's a Good Morning Muffins

2 cups whole wheat flour
3/4 cup Splenda
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup grated carrots
1 cup grated parsnips
1/4 cup cranberries
1/4 cup dark raisins
1/2 cup chopped pecans
1/2 cup shredded coconut
1 granny smith apple, peeled, cored and chopped
2 large eggs
3/4 cup applesauce
2 teaspoons vanilla extract

Recipe Directions for It's a Good Morning Muffins

  1. Put the rack in center of oven and preheat to 350F.

  2. Sift the flour, sugar, baking soda, cinnamon, and salt into a mixing bowl. Stir in the carrots, parsnips, raisins, pecans, coconut, and apple.

  3. In a different bowl, combine the eggs, vegetable oil, apple sauce, and vanilla extract and whisk until smooth.

  4. Add the wet mixture from Step 3 to the flour mixture of Step 2 and stir until the batter is just blended.

  5. Add cranberries. (Or golden raisins. Or semi-sweet chocolate chips.)

  6. Spoon equal amounts of the batter into the wells, about 3/4 full to completely full.

  7. Bake until the muffins spring back to the touch and are golden brown, about 35 minutes.

  8. Remove the muffins from the oven and let cool.

  9. Once muffins are lukewarm, remove them from the muffin pan and set aside to cool completely.
